Burst logging

I want to program my CR1000 to record differential voltage input from 8 sensors at a fast interval rate (probably ~10Hz), but only want to collect several minutes of data every hour.

Can someone point me towards documentation or even keywords that would help me figure out how to program the datalogger to record in this fashion?

If you want to measure multiple channels at rate faster than the main program (which is what I think you want),you can put these measurements in a subscan.

For all of your bridge measurements, if the DiffChan number is entered as a negative value, the number of Reps specified by the instruction will be performed on the *same* channel. This is equivalent to Burst Mode that was in the older (CR10X) type of dataloggers (but if I understand correctly, this is not what you are after).
