can someone point me to the right place or diagram to work out what the pin out is for the SC 12 communications cables? specifically, how they are different than a standard RS232 serial cable.

SC12 cable is just pin to pin 1 through 9, same as a typical RS232 cable.
Not sure which logger you are using but the config for the CSIO port on a CR1000 is in appendix C (page 387) of the latest manual, 1/09.
